Maintenance of knives

I introduce maintenance of knives except for resharpening today.
 
Many people think it is difficult to maintain knives, especially Japanese knives, because they are easy to get rusted. Today I introduce maintenance of knives, but I think it is less burdensome than many people think.
 
Many people think that stainless knives do not get rusted, but they are difficult to get rusted and it is not that they do not get rusted. Stainless knives have to be maintained as well as Japanese knives.
 
First, I explain very briefly about why knives get rusted. They get rusted because residue of foodstuff or water on knives after cutting binds with iron.
 
Therefore, in order for knives not to get rusted, we have to
1. completely get rid of residue of foodstuff, especially salinity or acid
2. completely wipe up water
 
In terms of #1, I would like you to keep in mind that you should wash residue of foodstuff especially when it includes something acid. Moreover, you may want to keep in mind that the boundary line between a blade and a handle easily includes residue of foodstuff and gets rusted.
 
In terms of #2, you might make your knife get rusted the following day although you wipe up water from your knife with towel. In order to prevent this situation, you may want to spill hot water on a knife. Hot water enables water to disappear into thin air. Please keep in mind that hot water should not be boiled water. Boiled water damages a knife.
 
-If you make your knife get rusted, you can get rid of little rust with powdered cleanser or you can find a kind of eraser that can get rid of rust.
 
-If you would like to keep your knife sharp for longer time, your cutting board should be wooden or rubber. Hard cutting board can easily damage blades.
 
-You may want to grease your knife with cooking oil. We grease knives with oil in order to prevent knives from directly exposing air.
 
-It is said that wrapping knives with newspaper is good for knives because printing on newspaper includes oil and newspaper allows air to pass through easily
 
These are tips for you to take good care of knives other than resharpening.
